Cheese Potato Bread

Serves 4
 

INGREDIENTS:

  • 600g potato
  • ¼ cup corn flour
  • 1 tsp caster sugar
  • 1 tsp salt
  • 1 tsp pepper
  • 80g mozzarella cheese (cut into cubes)
  • 1 cup vegetable oil (for frying)
  • 2 tbsp chilli mayo (optional)
Shop ingredients at Aldi, Coles, and Woolworths.
 

METHOD:

  1. Peel, cut and boil the potatoes
  2. Once the potatoes are soft to cut through (approx. 15 minutes) remove from the pot and drain
  3. Mash the potatoes and add the corn flour, sugar, salt and pepper. Mash till combined
  4. Separate the potato mix into 4 even amounts, flatten each ball in your hand, then add a small handful of mozzarella and close it so the cheese stays in the middle.  Roll it into a ball again and flatten it, then roll the edges with your hands to give it a smoother shape.
  5. Pour the oil in a pan on high heat. When the oil is hot enough, add the potatoes and cook on medium high for about 4 to 5 minutes until golden brown on each side
  6. Remove the potato bread from the pan and lay on a paper towel to remove excess oil
  7. Serve with chilli mayo or any dip of your choice!
